However, not really a great texture for jelly as carrageenan is short in your mouth, and there was a lot of syneresis (weeping) from the gel. The following day the gel was quite hard with layering. For a quick set jelly, it performed a little worse than expected. But for a no sugar jelly - it exceeded expectations on flavour and sweetness balance.
